The words Buon appetito will be heard many times this September at the five-star InterContinental Dublin as the Hotel’s Executive Chef Alberto Rossi hosts an Italian pop-up restaurant offering guests and diners authentic and genuine Italian food and wine.

Rossi’s @Seasons will be open from the 7th until the 30th of September, every Thursday, Friday, and Saturday from 6pm to 9.30pm.

Alberto, born in Milan to an Italian father and Irish mother, always wanted to be a chef and attended Vespucci College in the city and then went on to do his apprenticeship in various local restaurants. He moved to Ireland in 2002 to work with the team at the then Four Seasons Hotel and was appointed Executive Chef at InterContinental Dublin in 2014.

A regular on Ireland Am’s cookery slot on Virgin Media One, the Italian chef has won the hearts of many viewers yearning to cook authentic Italian food.

Rossi’s @Seasons will embody the spirit of Italian hospitality, blending traditional charm with a refined ambiance to create an unforgettable Italian dining experience.

With a number of Italian chefs on the Seasons’ Team, guests and diners can expect an array of authentic dishes from Lombardia, Veneto, Campania, Sardinia and Lazio using all fresh Italian produce from the Hotel’s trusted suppliers.

Opening on the 7th of September there will be one menu for the first two weeks and then a second menu for the following two weeks showcasing an array of Antipasti, Risotto and Pastas, Secondi Piatti (main courses), and also Primi Tavolo and Secondo Tavolo (sharing starters and main courses).

Antipasti will include Tagliere di Salumi Tradizionali – Prosciutto Crudo, Salame Ungherese, Coppa Piacentina, Pancetta Arrotolata, Speck del Trentino – served with in-house made Tigelle;  Crostone Grigilato con Burrata e Acciughe e Bottarga  – Grilled Sourdough Bread, Burrata and Anchovies, Bottarga); Culatello di Zibello e Burrata; Carpaccio di Manzo – Beef Carpaccio, Grana Padano, Rocket, Lemon and caper dressing; Lardo di Colonnata e Pancetta  – Served with in house made Tigelle; Fritto Misto di Mare -Prawns, Squid, Sardines, Courgette, Sage Leaves; Carpaccio di Polipo -Octopus Carpaccio, Spring Onions, Celery, Olives and Classic Bruschetta di Pomodoro.

There will be a slicing station where guests can enjoy the authentic Italian cucina feel and choose Italian meats and cheeses a plenty. Priced from €13 to €28.

Risotti and Pasta dishes will include Minestrone alla Genovese – finished with Basil Pesto; Risotto alla Pilota –  a traditional dish from Mantova, with Italian Sausage; Risotto Pomodori e Gamberi; Risi e Bisi, a wetter style Risotto with Peas, Spring Onion and Pancetta; Tagliatelle Zucchine e Gamberi – in-house made Tagliatelle, Bisque, Courgette and Prawns; Gnocchi di patate con funghi e Tartufo – in House made Potato Gnocchi, Mushrooms and Truffle; Paccheri, Pesce Spada, Melanzane e Pomodori Secchi – Swordfish, Aubergine and Sun Kissed Tomatoes and Bucatini All’Amatriciana – Guanciale, Onion, Garlic and Tomato Sauce.

PRIMI AL TAVOLO for a minimum of 4 people will include Risotto alla Parmigiana – Parmesan Risotto finished and served within the large parmesan round cheese; Fregola Sarda Ai Frutti di Mare- Sardinian Pasta, tomato sauce of sea food; Paccheri con Finocchio, Salasiccia e Pistacchi – Italian Sausage, Fennel and Pistachio, all dishes will be finished and served tableside. Priced from €22 to €32.

SECONDI AL TAVOLO, for a minimum of 4 people will include Porchetta di Maiale – Rolled Pork Loin and Belly, Fennel seeds and Rosemary; Tagliata di Manzo al Rosmarino, Grana e Rucola

– Beef Striploin Rump, served with Rocket, Shaved Grana Padano and Rosemary and Pescato del Giorno  – the fresh catch of day cooked whole and served tableside.

SECONDI PIATTI (main courses) will include Cotoletta di Vitello (Orecchio d’Elefante) – Breaded Veal Chop; Grigliata Mista di Pesce – Grilled Fish – Seabass, Prawns, Octopus Tentacles, Sardines, Calamari; Ossobuco alla Milanese – Braised Veal Shank served with Saffron Risotto and Scaloppine di Vitello al Marsala – Veal loin, Marsala Sauce. Priced from €32 to €45.

The Dolce will include a selection of plated desserts including homemade Tiramisu, Pannacotta, Traditional Crostata di Frutta, and Affogato.

There will also be a dessert trolley with the best of Pasticceria Italian  – Maritozzi, Baci di Dama.

A selection of Italian cocktails including Aperol Spritz, Negroni, Mimosa, Limoncello Spritz, and ‘The Godfather’ will be available to order pre and post-dinner, and Amaro and Grappa will add to the authentic Italian ambiance. There will also be a fine selection of Italian wines including Barbera D’Alba, Barolo, Nero D’Avola, Grillo etc.

Seasons, the fine dining Restaurant at the five-star Hotel, will on these dates in September, be transformed into an Italian trattoria-style with rustic imagery bringing diners back to the old-school authentic Italian restaurant scene.

On Sunday 1st of October, as the four-week pop-up comes to a finale at Seasons,  Rossi’s @Seasons will host an Italian-style brunch, ideal for a family get together, with favourites chosen from the previous four weeks’ menus.

Places will be limited, and it is advised to book in advance for Thursdays, Fridays and Saturdays from 7th to 30th of September.
